HARVEST 10 August 2005, grapes hand-picked, immediately processed in the early morning.
FERMENTATION After de-stemming and soft pressing, the grapes were left to ferment in steel at controlled temperature for about 10 days. The following February, the basic wine, to which was added the liqueur de tirage, was bottled. GRAN CUVEE GOLD remained bottled, sur lie, for 10 years. During this long period of time, our expert Oenologist Dr. Cesare Ferrari tasted the wine regularly to monitor its evolution. In 2015 the bottles were taken from our controlled temperature and humidity premises for dégorgement.
SENSORIAL ANALYSIS
COLOUR Bright antique gold with very lively reflections and fine perlage, elegant and very persistent.
BOUQUET: elegant and fleshy. Fragrance of ample complexity: candied citrus, passion fruit, raspberry, currant,
hints of dried lavender, nuts, biscuits and crusty bread, vanilla, chestnut honey, hints of balsamic and ethereal.
TASTE: feeling of volume on the palate. The bubbles are silky and of fine quality. Balanced with intense, fresh and fruity body, the wine evolves in intensity and has long persistence. The finish is very long, with references of fruit and biscuits. Great expression of longevity.
